Hey all,
Just got back from a week of fun in the sun and drinks a plenty on the beach in the Mexican Mayan Riviera. I didn't want to come home to wet, cold weather but all good things must come to an end. The silver lining to this rain cloud is knowing that I will soon be making my first fatty.
I've been looking up all kinds of recipes and videos on line and now I can't decide what to put in my fatty. I'm looking for your suggestions. I know some of you have tried all kinds of different things so I wanna know what you liked and didn't like. I currently have some ground beef, bacon, cheese and vegetables. I'm thinking this would be good for the bacon cheese burger recipe. I have a lot of ground beef and bacon so I think I'll make 2 or 3 fatties. Help me decide what to put in the other ones.
As I type this, my wife is wondering if there's a way to make a vegetarian fatty. (she doesn't eat a lot of meat) We're thinking zucchini could be used as bacon, chopped mushrooms could be used as ground beef and other vegetables,cheese and tofu could be used as filling. Again, your ideas are appreciated.

OH MAN!! You have got to be kidding me!! You actually used vegetarian and fatty in the same sentence!! I would love to help but My Brain just did a system dump when I read that. I can't compute anything even remotely close to what your asking at this point in time.

I would start with a bacon explosion.

I have made fatties just like a pizza, minus the dough.
Start off with Italian sausage, top with pizza sauce, onions, green peppers, olives, shrooms, jalapenos, cheese and pepperoni.
Roll that baby up and enjoy.

You can make a fatty into just about anything you like - the bacon cheese burger is a good idea, i've made a pizza fatty with pizza sauce, peperoni, mushrooms and cheese... what ever sounds good with ground beef.
I know there are veggie burgers available - i wonder if you can get bulk veggie "burger"? That certainly seems like it would hold together like a fatty better than mushrooms... then add whatever you want inside. Interesting idea...
haha, yeah I figured the veggie thing would ruffle a few feathers. Although my wife does like meat, she's really not suppose to eat it because of a medical condition called PKU. She's really been enjoying the food I smoke so I'm always looking for ways to include her in on the tasty fun. The veggie burger sounds like a great idea. Why didn't i think of that? Duh... come to think of it, they also have ground veggie stuff too. Maybe I'll give that a shot. Well, I guess I'm off to the market to pick up a few more ingredients and than it's Fatty time. Oh, I guess I should cook one too!!!
I have had my eye on a Vegetarian Italian Sausage recipe for some time. I've got all the ingredients just haven't gotten around to making it yet. Over 95% of the ingredients came from one supermarket, and a few ingredients I had to go to a health food store. The following recipe should be able to be used for a "Veggie" :D

Wow wow Chris it's OK just listen to the sound of my voice very carefully. You have to take 2 deep breaths so you don't pass out on the way to the Bradley, when you make it to the Bradley if you don't pass out you have to open the door and put your head inside the smoker. Now don't over do it or you might hyperventilate but take slow deep breaths of that smokey smell. This should help you with the spinning in your head and keep you from expiring completely. You should not have to resort to licking the walls but you might want to just rub your other smoking apparatus and you better follow up with smoking a rack of ribs or a nice all meat fatty. One just with hamburger, homemade sausage and bacon. Can you imagine,
vegetarian fatty. We are going to have to reform that guy, I know, I know, he was just trying to appease his wife, but there are just somethings that don't wash around here.
My Son#2 dates a girl that is a partial vegetarian (She eats shrimp and fish)
I have been buying a Veggie-Burger-Mix for when she comes over to eat.
It's made by Seitenbacher (a German Company) and she told me it is the BEST
veg-burgers she has ever had.

My wife thinks I will probably figure out how to smoke a green salad, well not yet. Good on you to try for a veggie fatty. The veggie burger mix at the market should work as well as the suggestion from CRG. As they say on TV, " This should be intresting ".

Nice Try Brother Q but on my way to the smoker I passed the gas grill took a couple deep breaths, then passed the charcoal grill took a couple more deep breaths, passed the BE SRG took a couple of breaths everything was starting to clear up then I see the super small type stood out like it was in red. Brain System dumped again!!! Now I'm trying to flush the whole idea with some Black Velvet and coke third glass with a 8 second pour. Still isn't working to get things to compute a ............ ......... I can't even type it anymore!!
OH GOD NO somebody come up with a solution. STAT. Who ever lives closest have has to go give Chris hand to mouth smoked food resusitation and hurry. MOINK BALLS, FATTY, HOMEMADE SAUSAGE, 3-2-1 RIBS,visualize Chris, we know you can pull threw. PORK BUTT, BRISKET,ABT's. Nurse get this man an IV of Rye and Coke and a platter of smoked kebabs.
Getting better now just finished some pork fajita's off the grill just cut it up and ate it plain to get it in my system. Recovering nicely. Maybe the alcohol as well!!

I hope this doesn't actually kill anyone, but I have actually attempted the veggie fatty. That's right, it's in the smoker now. Quick, everyone reach for the jerky and beer!!! Well, the veggie fatty is more like a pinner.
So I picked up some veggie ground. it doesn't stick together very well so I mixed in an egg. I'm hoping that will be good enough for a binding agent. I slapped on some other veggies and feta cheese. Although the egg made it more sticky, I'm leaving it wrapped up in tinfoil for a while hoping that it'll hold better once cooked a little.
And for you meat lovers, I also made a bacon cheese burger fatty and a pizza fatty. Also in the smoker now.
I'm thinking I will pull at 160 deg. Does that sound about right?
Now, If I can only find some vegetarian bacon....

The results are in. Bacon cheese burger fatty was pretty good but the pizza fat takes the cake. I think it had something to do with the sauce. I cooked em both to about 165. I think 160 would have been better as the beef was just tad bit on the dry side.
And now the moment you've all been waiting for....
The veggie fatty sucked!!! The wife took a few bites and that was that. I tried it and it was kinda like cat food. I guess the veggie ground was the problem. NOT GOOD. I think I'll try it again in the future but I'll use a different brand. Gotta admit, I was looking forward to better results just to prove some of you nay-sayers wrong. The worst part is that this is the first time wife refused to eat something I've cooked for her. That hurts just a little. Oh well, better luck next time. Still glad I tried it though.

10.5, I'd love to hear about your results or anyone else for that matter. I truly believe the idea is there and it can be done, it just needs to be perfected. My wife would certainly appreciate it. Oh, I forgot to mention, a big part of the reason she didn't like it is because the vegie ground is soy based. Soy has a lot of protein in it. She's not suppose to eat a lot of protein due to her PKU. It's a weird condition. I knew that when I bought the stuff, I just figured soy would be better for her than meat. Once again, I was wrong.
I did get some pics but can't post em. They did look delicious though. I think I'll start a new thread for smoked vegetarian food and see what kind of ideas I can get. I know, I know, you all told me so....

Yeah I've read lots of that forum. I tired cheese once with poor results. I did some veggies and put in pasta sauce. That was great. I also do hickory cashews on a very regular basis. Friends and family can't get enough of em. Neither can I....
