Title: when is my bacon done curing?

hey guys just wondering how to tell when my bacon is done curing it's been in the fridge for 5 days i'm using the 10.5 recipe. and how many days max curing?  thanks

I usually go 7 days and it turns out fine. When I did go 11 days it seemed a little tougher and chewier bacon. Just make sure you turn it every day.

Seven days is my norm.  If it's thick, maybe another couple of days.  It should feel firm to the touch all over.  As WD said, keep turning it - once or twice a day.

It's hard to go wrong.
