I Did some smokies today in the BS. I used 1/2" wooden dowels for the smokie rack. The seasoning is a pepper stick wich I love. Hopefully this picture will take so I can share it.

Did you use sheep casings or callogen casings? They look like callogen.

I use a jerky gun when I make these. Same recipe as the beef sticks/smokies.

Doug I used collagen. I use fresh hog for other sausage but the fresh sheep are hard to find. I do prefer natural casings. The spiced used on these would hold up well to deer and other game.

Give it a try. I'm sure your taste tester will not be disappointed. (I like to add some mustard seed to beef sticks.)

I checked out the website that you posted. They look like they have about everything you might need. Right now I have a good local source for casings, though I will need a new source soon. I see that they sell callogen casings by the per 3 etc instead of requiring the purchase of a full caddy.
