Title: Bacon emergency

I have a question for anyone who can awnser.  I'm using 10.5 recipie for my bacon it is done curing and is now drying in fridge the recipie calls for 12-24 hrs uncovered in fridge.  I was gonna smoke it in the morning but I just found out I can't do it till afternoon that will put my bacon in the fridge for 30 hrs is that ok????  I hope so or I just ruined 11 lbs of bacon.  Please let me know asap.

Leaving it in the fridge that long won't hurt.  The fridge is acting as a dehydrator to dry off the outside of the bacon.  When dry, the skin will take on smoke better.

Don't worry about it.

That should be no problem, I'd probably wrap in pastic after 48 hours.

It should be fine in the fridge for a couple extra hours but I would wrap it again if it is going to be in there any longer.
