I am doing some baby back ribs and would like to have them come out "fall off the bone tender" I know this is not the professional way to do them but that is how i like them. Also yesterday i had a root canal and don't want to have to chew to much. my question is which period do i extend the smoking to make them this tender. I am using tghe 3-2-1 method and thought that i should extend the 2 hour foil wrap session to make them more tender. I was going to extend it an extra hour. am i on the right track.

I won't claim to be an expert, but after three attempts to do ribs naked (the ribs, not me), and having them come out chewy, I followed the advice of everyone and did some via the 3-2-1 method. One of the foil packets leaked, and it really extended the cooking time for that rack. The foil seems to make all the difference, so I suspect that extending the foil time will do the trick. I would probably try 2 1/2, 2 1/2, 1 or something like that.
When you foil them and get them to the tender stage you want,
you could do a quick broil in the oven for a finish or on a grill.
If you do the babybacks with a 3-2-1, you will likely have them overdone. Use the 2-1-1 and extend the time in foil if needed. And what CRG said!
Already done the 3 hours of smoke. in the foil as we speak. i will just have to wing it and see what happens.

Just try 3-2-0 and see what they look like. Leave them in the foil for another '1' if they aren't tender enough.
