I smoked a batch of Canadian Bacon last weekend and smoked a batch of Maple Canadian Bacon this weekend. When they reached the IT I pulled at the finished CB with my omni tasking pig tail flipper it just rolled to the front of the rack in the Uber Smoker. The fridge smells so good ;D anyway on to the rubber bands. My mother-in-law collects rubber bands and puts them on a vitamin bottle on the counter. She has quite a collection going and I have no idea what she does with them (she is 84) or what she plans on doing with them. Anyhow I'm prepping the Canadian Bacon on the counter a few weeks back and have it in the zippy bag all rolled up and the rubber bands just jump out at me. So I take a few of the wide track ones and put them around the pork loin in the zippy bags and toss them in my hidy hole spot of the fridge. The next day when I go to turn the loin the rubber bands had shaped the loin into a nice round log shape. By the time I get to smoking them they stay round and don't need to hassle with tying them up with butcher twine.

I plan on a Canadian Bacon smoke some time in the next two weeks and I will give your rubber band experience a try

Or Mickey Mouse shape ;D I was making hamburgers one night and my wife was not in a good mood from work no doubt so I asked her what shape she wanted Mickey Mouse Shape, Attack Landing Craft Shape or Smarty Shape (from a Faulty Towers TV show) she chose Mickey Mouse shape so I made them look like Mickey Mouse. When she saw the hamburgers she just busted out laughing and her mood went from poor to great. I love it when a plan comes together.

I think the rubber banks may have improved the taste too because that was a fantastic batch... ;D

An update on this. I've started using the thick plastic part underneath sliced bacon from the store to wrap my canadian bacon with while it is in the fridge with better results on keeping it more in a round shape. So I bag it up, wrap the plastic part around then a couple of rubber bands... which I seem to have an endless supply of.
