Smokies, they're at 140 IT. venison with 25% pork trim. They say 138 to be safe with pork....can I take them out without going to 152?
152 is "ready to eat" but perhaps not appetizing. I'd cook 'em up some before final use.
Relax GrassHopper everything is going to be just fine. Let them cruise along and through the stall. If you pull them now you will as Arnie has pointed out have to cook before eating.
Haha, I know...be patient. I got called out to work last night...yes on father's day. BLAH!!!
So I had to finish the smoking asap. I ended up cranking it to 185 and they finished fairly quickly. Had a little bit of grease start dripping...but what can you do. They still turned out very nice.
