I never knew you could smoke your own cheese until seeing it so many times on these forms. I think now I understand why I bought some smoked Gouda on and impulse buy this weekend? Looks great!

NePaS - Looking good.  TestRocket, you have to try it.  It is awesome.  Just read the Cheese posts first.  This last batch of pepper jack I did I let sit for two months and now it is amazing.

DTAggie, I plan to try it but I think I'll have to wait  4-5 months for it to be cool enough.

I got an assortment of smoked cheese thats been vac sealed for 7 months. Cutting it up for the smokeout.
