Post by: Osibisa on June 06, 2005, 03:32:08 PM
Hi,
Thought you might like to see how we do it over here in the UK. There is room on the table for the Tea and Biscuits as well![:)]

Those look pretty tasty Peter.  How about the recipe?  I'd love to give 'em a try and maybe make some Cha Siu Bow.  Afraid I had to Google Osibisi.

Cheers,

Tom

Hi Tom
In the UK they sell in the butchers and Supermarkets various cuts of meat, chops, ribs etc and they are covered in a "Red Chinese Powder". I have mentioned this in another thread. The contents of this "Powder/Rub" seem to be a closely guarded secret because nobody will tell you what it is or where they get it from. To cut a long story short the rub consists of:-
A measure of Fivespice
A measure of sugar
a pinch of salt.
Red food colour.
and a pinch of MSG. (Don't know about the consequences of this).
The red colour is apparently nothing to do with the taste but it seems to appeal, for some reason to the UK market.

Thats it.. simple.

Peter.

Hi Peter,

Notice you live in Norfolk, my mum now lives just down the road (!) in Suffolk..... immediately guessed you were south of us from the picture. The sun is shining!!!![:)][:)]

Nice pictures.... not sure whether I prefer Kummock's pictures in the snow or yours in the sun. Sure beats wet and windy either way!!![:(][:(]

Are these the ribs done with the rub you posted gotten from the chef in the place where you are currently working??

Hi Manxman
Yep they are the ones.. Small world isn't it. Especially with the internet these days.
I have a live cam on in the back garden if you wish to have a look around at the weather. I had it looking at the Bradley this morning..
You can steer this one if you wish to.

Peter.

Thanks Peter.  I've got a package of something called "Red Roast Pork Seasoning Mix" that I bought at the local asian shop.  It was  imported from Thailand.  Sounds like it should do the trick.

Those ribs looks great, Peter!

As for your other question, wasn't Osibisa a rhythmically based musical genre of the early 70's?  Just a vague recollection from those lazy, hazy days of college . . . [;)]

Hi Peter,

The ribs look fantastic. I'll see if I can get some Chinese seasoning and try out some ribs this weekend.

Nice cam. What's the brand?
The software seems good too.

I still have an LP of Osibisa!

Hi Lasse
Sort of OT but the camera is a Logitec Orbit cam and the software is from eyespyfx.

Since I started to try and find a contact for the elusive red chinese glaze powder I have in fact found a source for it in the UK but I had to buy 2.5 Kilos!! Sounds a lot but it was relativly very cheap at about £11.00 a tub. I also bought some honey glaze powder and Pepper rub from them. Perhaps I can bag it up and sell it!!
"Petes Magic Smoking Mix!"

Hi Osibisa,

Sorry for the late reply--I've been exhausted from getting back to work this week . . .

Didn't need to look it up . . . I'm 53 and used to love that rhythm!

Hey Osibisa! I'm 54, but hadn't heard of that "musical genre"....of course I lived waaaaay out in the sticks on a ranch with one radio station that was mostly farm bureau reports and stock (cattle/pigs/etc) prices[:D]

BTW....the ribs look GREAT![:p][:p] My wife complained about the food lacking "spice" during her visit to your Big Island...she obviously didn't eat at your house![:D][;)][;)] (Leave it alone CB, or I'll box up the cat and FedEx it to you...LIVE![;)])
