Title: Mashed Cauliflower

Not sure what category this falls under but here it is.  I got this from a diabetic buddy of mine.  He can't eat potatoes like he used to so he found some "substitute" recipes for his favorite non-diabetic friendly foods.  I got the idea from him.  It's a great substitute for mashed potatoes and make for a nice little change. 
Basically, it's just like making mashed potatoes but you use cauliflower instead.  Boil it,  mash it up and add butter, milk and S&P. We also like to add garlic and/or cream cheese and sour cream.  What you add is up to you.  It's a big hit around here.

I have as well; however, we boil the cauliflower in chicken broth with enough to cover it.  Mash it when it is soft enough to do so and then we melt parmesan cheese in it.  The parmesan cheese really adds to the dish.

I agree - it sounds really good.  I will fix that sometime.  What a nice change of pace from potatoes!

The wife is whippin some up as we speak.  Of course, I'm also grilling a cold smoked ribeye, portabella and tomatoe.  Mmmm

As a DM2 myself, I have found cauliflower to be very useful and tasty.  In addition to the mashed we also use it to make Potato Salad. 

Cut into florets and steam and then make your favorite potato salad recipe.  Pretty darn good and tasty.   We'll also do a 3/4 cauliflower and 1/4 potato as a combo.

Wow, I never thought of that Caney.   Great idea.  especially since I'm not a huge fan of potato salad.  Somethin about cold potatoes...

There's a similar recipe in the South Beach Diet book using cauliflower and the I Can't Believe It's Butter Spray.  I love the mashed cauliflower, too.
Another lower starch alternative is using Jerusalem Artichokes (aka Sunchokes) instead of potatoes in any recipe calling for potatoes.
I have made augratin with them even :) folks even fry them.  They are very potato-like in taste and texture with a slight artichoke heart taste.
Never heard of them until a friend gave me some tubers to plant in my garden several years ago.  They are very easy to grow with no care.
