Title: How much meat for 40 people?
Post by: SmokeDogg on June 23, 2010, 08:13:22 AM
Having a party this weekend for 40 people.  Planning on doing pulled pork and whole briskets.  Could anyone tell me from experience how many butts and how many briskets I should smoke to feed 40 people at a party?  Any advice would be great.  Thanks!

Figure a 40% loss on from raw to cooked on pulled pork. I've never weighed a brisket after a cook, but I would assume it is similar. I use 50% as a cushion.

40 people - hearty eaters or not?

I would figure 1/4 to 1/2 lb each depending on how many side dishes there are.

So (40 / 2) *.25 = 5 or (40 / 2) *.5 = 10

so start with 15lbs of butt and 15lbs of brisket. I'd probably go 20 /20.

About a lb of RAW meat per person.

With 40 to 50% shrinkage from cooking that will be 1/2 lb per person

and should get you some leftovers for sammies.
