Got my new stainless Bradley today. Im taking her for a test drive this weekend. Any suggestions for a first smoke on her. Also, has anyone ever done beer-butt chicken on a Bradley? Thanks in advance for any replies.

First Congrats on getting a Bradley! Next, several of us have done the beer-butt thing with a chicken.

As far as what to smoke first my choice would be a pork butt or a chicken.  We have a recipe site <b>HERE</b> (http://susan.rminor.com). Welcome to the Forum, Lauren.  Olds' advice is right on the money. Also, before you do anything, read bsolomon's excellent piece on seasoning your BS at http://susan.rminor.com/forums/showthread.php?t=129

A couple of other tips:  1) Don't open the door of your BS to check on the food--trust the thermometer (better yet, get a Maverick ET-73 or other remote temp probe so you can read the meat temp without having to open the door. Only open the door after 4 hours to replace the water in the bowl.  2)  Most of us never use more than 4 hours of smoke time.  3)  leave the damper open at 1/4-1/3 of the way to avoid moisture buildup problems inside the BS. 4)  Remember Tip #1!!!

Welcome Railroad. You can find all the answers to your smoking questions by searching. I am pretty new to smoking but have smoked a lot already in my Bradley. The folks on this site are always ready to help with quick responses.

Hey Railroad,

Have fun experimenting.  It's tough to ruin anything.  

When I first started I did up babyback ribs for 6 hours using hickory pucks and they were the hit of the party.

I know, now, that I didn't have to go that long but they still were great.

I've done a bunch of briskets on my weber that were all failures but with the bs I scored the big one.  It took 9 1/2 hours but man was it great.

Remember, though, a great rub goes a long way for success.

Welcome Railroad.  I just got a SSBS a few weeks ago.  For my first smoke I did chicken leg quarters.  Brined them in 3 TBSP of kosher salt per quart of water for a couple of hours.  They turned out very juicy and tasted great! Bradley rules.[:D]
