Title: Bacon wrapped chicken thighs

After seeing CRG do bacon wrapped chicken thighs, I decided to take a stab at it.  These thighs were left over from what I used to make sausage over Memorial Day weekend.  I thawed the thighs, pounded with a mallet until thin, coated each side with a little EVOO and sprinkled with Head Country rub.  I place a slice of mozzarella and then rolled it up and held together with a toothpick or two.  Next, I wrapped one slice of bacon around the length and another slice around the width and used some elastic meat ties to hold the bacon.  Two of the thighs don't have bacon as my friend Moose can't do pig.  These went for a little over 45 minutes on the Bubba at a steady 400 degress.  They were so tender and juicy.  I will be doing these again.

They look every bit as they sound!

I think you have a few new friends in Head Country!

Is really good stuff!

I have seen on other sites where that is there go to Rub.

The elastic ties came with my Showtime rotisserie. 

I've almost used them all up.  They work great for stuffing a steak or pork chop to help hold everything together and you just cut them off before eating.

I saw one of the 'Two Fat Ladies' using those rubber bands instead of butcher twine just today on the Cooking Channel. Slick idea!

I loved watching the Two Fat Ladies.  I guess they much be showing re-runs on the Cooking Channel, I'll have to look up the schedule.

I'm glad other enjoy it as much as I do.  It is really good stuff, I've even used it on eggs ;D
