Title: honey in sticks

I am making a new batch of sticks today and would like to add some sweetner.  I have always liked the honey garlic sticks and wondered if I could just add honey to my pepperoni sticks to "honey" them up a bit. Is this a good idea or will the honey settle to the bottom of the sticks during smoking?   How much honey should I add to a 10lb batch of sticks?

I've added honey myself to some sausages and they turned out great.
For 10 Lbs I used 1/2 to 3/4 cup.

These were not smoked, just slapped on the BBQ.

For smoking:
It should not settle, no other liquid does that I know of.

So it would depend on how sweet you want your pepperoni. Also if your recipe calls for added water make sure you reduce the added water accordingly.
