This is gonna be the First 4th of July that I have not cooked/grilled/smoked/etc at my House for a very, very long time.
I said Yes to an invite with out thinking.
I am going to a Cajun Microwave Hog 4th.
I am doing: Rolls from my Starter.
5lbs of Cilantro Potato Salad (maybe 10)
Tub of Salt Lick Beans
4 quarts of Salsa Verde (smoked)
Was told there would be 95 to 120 people.
This is going on it's 11th year of it happening.
These are Country People coming to this thing.
If you have ever experienced a Church "Dinner on the Ground" and all the
GREAT food that was there, This is it with out the preaching and singing.
Well I'm sure if you bring some spirits you can get some singing going. Sounds like you're going to deplete your starter.

I know how you feel. You accept the invitation and then think "Aw man, I just screwed up my own tradition". I know you'll have fun once you get there but it just ain't the same. I've done the same thing more than once.
You should take some boudin to liven up the party. Throw that in the box with the pig for a while.
Not smokin here either CRG. Decided to do 4th on the USS Midway, now a museum. Will be fun watching the fireworks from the deck of the air craft carrier. Going to the Fair on the 5th and will get to see Blue Oyster Cult.

Hang in their buddy, I feel your pain. Once you build your own tradition having it disrupted is like seeing a child leave home. The good side is the folks there will really appreciate your being there and all that you bring. You'll make it so much better that they won't want you to ever leave. They'll love you.
Have decided to smoke two briskets tomorrow and give them to two employees that don't smoke/grill.
I just don't understand people like that.

Getting your 4th fix by helping others. Very nice Sonny.
Was at Sam's this afternoon picking up some briskets and this guy walks up and starts asking this other gentleman how do you cook a brisket. He says he eats BBQ a lot but is intimidated by the big piece of beef. Before I can offer some good advice the other guy starts in with some wild arse ideas about cutting slices into the meat and seasoning then cooking for 5 hours (on a 14 lb brisket). The gentleman who was inquiring only had a gas grill. I was in a hurry and did not get to wait around to try and set him straight.

Not sure about it at the fair but I suspect in the early days, at a regular concert, there were many "smoking them". 8) 8) ;)
