Title: First Butts, how long for two 8 pounders?
Post by: JazzFan on July 02, 2010, 03:13:11 PM
I finally got the brisket thing down  ;D.  Now it's time for some pork butts.  How long do you all suggest that I plan for cooking time per pound (2 x 8 lb butts)?  I am going to put em in tonight and would like to be able to give the guests a good guess as to when we will eat.  thanks!

Figure 16-20 hours.

Be prepared that one of them may reach your target IT (190-200F) a couple of hours before the other one.

I would rotate racks top to bottom and front to back every four to six hours.

You can use FTC to stage them if they are done early, and I FTC them at least an hour.

Also agreed.  You can have two butts where one came from a nasty critter and will take longer than the other.

An FTC up to 4-5 hours on one or t'other wouldn't hurt.
