Title: 4th of July Smoke is underway....
Post by: SnellySmokesEm on July 02, 2010, 08:58:26 PM
Well the holiday weekend is here and I'm ready to smoke!  ;D ;D ;D  I'm having a small BBQ Sat afternoon with some friends and Batman of BBQ is bringing chicken and ribs.  I am smoking a 5lb prime rib and a 3.5lb Boston Butt.  I have done a lot of research on the Prime and I hope I dont screw it up.   ;) ;) ;)  Looks like I'm gonna smoke at 200 till it get up to 120 and the ftc.  When its time to serve I'm gonna blast it in the oven at 500 to crisp up the outside.  I bookmarked an an old post on prime rib a while back that was really helpful:

Ka Hanu had this page in the post that was the most helpful

Heres the pork butt after a night in the fridge rubbed with Jans rub, injected with garlic butter and wrapped in plastic

The Prime Rib is rubbed with S&P adobo montreal seasoning and spent the night in the fridge as well.

Batman of BBQ brought over chicken wings and ribs
Chicken was smoked and crisped on my gasser

The Prime Rib.  Pulled out of the smoker at IT 121, FTC'd 2hrs and the IT was still 118.  Put in the oven at 500 degress for 8 minutes.
