Title: Doh!!! I slept in...What about my ribs?
Post by: StickyDan on July 03, 2010, 01:00:00 PM
Ok, so the plan was to put my ribs on at 10 am today.  Well, we where at a wedding last night and stayed up pretty late.  I set my alarm but it didn't go off.  I didn't role out of bed till noon.  I quickly pre-heated the BDS and pulled the ribs form the fridge.  The BDS preheated to about 270 so I put the ribs in (about 12:45 pm)  with out giving them much time to come up to room temp.  I'd like to be eating dinner around 6:30 - 7:30 the latest.  So, I'm thinking of bumping up the cab temp in order to speed up the process a little.  I've got ribs on the top 3 racks and I don't plan on foiling either.

Any thoughts on what temp I should use? How long it would take?

I use the 3-2-1 for spareribs and 2-2-1 for baby backs and 2-1-1 for beef ribs (time is an estimate) at 225*. so at 12:45 you should have enough time to eat between 6-7

It should be right in the 5.5 - 6.5 hour range.
