Title: First time at a few things

Well tried my hand at a few FIRST

            First try at Turkey Sausage
                            Rytek Kutas Recipe
                            Soy Protein Concentrate ( powdered Milk)
                            Powdered Dextrose
                            adding a lot of water before stuffing
                            Emulsified the mixture

Stuffed really easy with the extra water added, we will see how it turns out when it is done, in the smoker as I type

ooops sorry .......... Yes it got done last night around 9:30, WAYYYYY longer than I expected put in around 9-9:30 am

stalled at 130 for quite some time then finally got to the 160 at 9:30

They turned out pretty good if you like turkey,texture was more "normal sausage like" moisture was better. So I am starting to get the hang of it

I don't see any temp probes.  How are you measuring CT* and IT*
