Title: Carnitas Chili
Post by: stillsmoking on July 11, 2010, 05:28:40 PM
Had some leftover Nepas inspired Carnitas and added them to our basic chili recipe.  We use;
5 cups water
2 lbs smoked burger (in this case pork carnitas)
2 smoked onions
1 can Rotel diced tomatoes with lime juice and cilantro
1/3 jar Mrs. Renfros hot jalapeno green salsa
1 can black beans
1 can pinto beans
5 Tbsp chili powder
5 smoked jalapenos
8 smoked Roma tomatoes
2 smoked garlic bulbs
In this case we put all in a pot, brought to a boil and simmered for an hour.  This is the result, very good!

The carnitas have a fair amount of seasoning to begin with and this is warming.

Your chili looks great!  I like to save leftover pulled pork, brisket, and the skirt from spare ribs to throw in my chili.  Heck, I'll throw just about anything in my chili, well except the kitchen sink....  Cant wait for winter so I can make some again!
