Title: Pork with apples
Post by: BBQutie on June 13, 2005, 12:25:40 AM
I'm separated from my smoker for a couple weeks - it's terrible!
I'm planning my cooking for when we're reunited.
I want to smoke a pork butt - and I'm wondering if I could somehow 'stuff' it with apples or applesauce - and then make a rub with brownsugar - maybe some cinnamon - ...? need to think this one through a little further
In theory it sounds good to me - has anyone done anything similar?

I have used a rub with brown sugar and cinamon and marinated the pork in a apple juice and apple cider vinegar with good results.Take it easy on the vinegar because acid content.Maybe 2 cups apple juice and 1/2 cup cider vinegar.BTW welcome to the forum and look forward to your experiences[:)].

Very interesting thought; injecting the butt with apple sauce.  That might work.
