Title: Tuesday Dinner - Chicken Thighs
Post by: ArnieM on July 13, 2010, 04:29:44 PM
Sorry, no smoke.  Had T'Storms and about 2 inches of rain in the last five hours.  So ...

Soaked 'em in CT for about an hour.  Drained them off and coated them in roughly a 50/50 mix of flour and Italian bread crumbs along with some S&P.  Then, back to the fridge to rest for a half hour or so.

Put 'em in my cast iron 15" pan with about 1/8 inch of Canola oil running around 350.

They're getting happy.  Almost done.

Plated up.  The veggies are green squash, carrots, onions, garlic and some of Rodak's coffee rub for seasoning.  The mac salad was left over a few times and left the house after dinner.
