Title: Greetings from Delta, BC
Post by: webbo on July 15, 2010, 04:29:52 PM
I just picked up a digital smoker from Canadian Tire for $400!  I'm trying a whole chicken for my first attempt....I hope I don't kill myself!  I am cooking the 3lb chicken with a maple syrup/rub mixture at 230F for 5 hours with smoke for 4 hrs.  Any advice?

welcome to the board webbo!

which wood are you using? in my opinion if this is your first smoke 4 hours might be overkill on chicken - i would suggest trying 3/4/5 pucks (1hr - 1hr40min) first.

once the smoking is finished you can continue to cook in the smoker (without rolling smoke) to bring the chicken up to temperature.

FLB has it right with the tip re: vent wide open

good luck and be sure to ask questions if you have any!

Welcome Webbo.  Poultry is a smoke sponge so 4 hours may be excessive unless you like a LOT of smoke.

Have fun and report back to us.

Another BC smoker.  Welcome. I'm in Poco.  My only advise is to send some my way and I'll taste test it for you!

Ok so now that we have a posy, who's having the Lower Mainland Smoke out??? Wink wink, nudge nudge!

Thanks everyone for the pointers.  I never realized until I read the manual that Bradley is about 6 blocks from where I live! Sorry, Stickydan, but leaving Saturday for a fishing trip....lots of kokanee for smoking!

Hey webbo, surrey here. I agree with them on the smoke time. The Bradley gives off some very concentrated smoke so 1 1/2 hrs. 2hrs if you really like alot of smoke. I am not even going to acknowledge that one StickyDan. :D :D :D

I finished the chicken a little while ago....you guys were right on.  Five hours was too long, and the smoke would have been better for 1 1/2 to 2 hours.  I still liked it though....can't wait to try some ribs!

Next it's ribs, than brisket, than cheeze, than weird stuff that you never thought of smoking before like cereal.   Welcome to the club!  It only gets worse from here.
Q & Rp, i have space for a few people.  HOw many of us are there in this area? I think hosting would be fun, just not sure if my smoking skills are up to par.

SD we should take this over to the Smoke Out Boards.
But on having a soke out I think we could all
contribute something.
