Title: HELP NEEDED (Thanks for the help)

Two pork roast smoking been in 5 1/2 hours and 4 hours of smoke,but bad weather in moving in, gees it is July in OKlahoma it does not rain this time of the year, any way I have put the pork in the over at 215 degrees, with pans of water under them.  Is there something else I shoudl do to them or use a different temp or anything?

Should work fine.
I put mine in a foil pan with a little liquid in the bottom and a foil lid over the top.  Does soften the bark some though.

Pretend the oven is your Bradley and monitor the IT.

The roast are on racks not in the pans and the pans of water are on the over rack below and pork and it will drip in the pans.

That will work well.  May have a bit of a mess on the oven racks to clean but the meat will come out great.

Ok thanks now I have a different problem the smell has filled the house and we are now ready to eat some of it.

Yes, that is a huge problem.   :D
Brisket will create the same problem if you are face with it.  ;)

Just checked them one is at 145 the other at 150 set stove on 210 now will see where I am at in the morning.

I can answer that one. You will be at home and after smelling those butts cooking all night you will be starving when you wake up.

I woke up about 6am  and the house smelled great fired the dbs back up when the temp hit 230 put the two roast back in pulled the first one at 12:10 IT 190 and FTC it went and the other at 12:50 and FTC.  Will eat them this afternoon about 5.  3 of my kids and myself may have taken a test bite from each.  MMMMMM I took some pics and will post later.

We would have known you were fibbing if you had said you didn't stop for a taste test.  Always better to fess up.  :)
