gonna do some of those country style ribs (thick cut butt steaks cut in half) and some chicken leg quarters any suggestions on the smoking i was thinking mesquite I will be  finishing the chicken on the NG grill while the pork will be gettin the 3-2-1 treatment with the best sauce money can SWEET BABY RAY ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D

Mesquite will be strong on the chicken..

Be sure to place the chicken rack under the CS ribs.

They are a little milder.   I wouldn't go over 2 hours with the smoke.  Maybe a bit less.

I like apple wood with chicken and have done thighs with two hours of smoke. Good luck!
