The single probe does a great job for holding the temp with in 1 or 2 *

The dual will allow you to keep check on IT of your meat and if need be

turn down the smoker when the IT has been reached.

It is also great for ramping the temps for sausage making and salmon smoking.

You also don't have to use the meat temp probe on large loads, you just set everything to time.

Could I get by on the single, yes. But I bought the dual. Two of them.

You will also be wanting a maverick. either a ET-7 or an ET-73.

I'm very happy with the dual probe PID and the ET-7.

And yea! You're going to broke hanging around here!

I'm just coming around to accept it myself!  ;D

I"m going to hijack the thread and inquire as to what kind of vacuum sealer you guys use.  It seems no matter where I look they all get terrible reviews.  I don't want to spend a whole lot since I won't be using it to pack away kills.  Mainly just for cheese. leftovers and various other things.

my 2 cents on the maverick - I picked up a few cheap (under 20 bucks) single probes at different times (why I didn't get a maverick) and they're both very true to temp after boil testing.  Don't get me wrong, I still want one because I have a sickness, but a small collection of probe thermometers will do the trick as well and still be cheaper than the mav.

I like the maverick 73 because of its wireless capabilities. As far as a vac seal, I have the Foodsaver 2840 that I got on QVC for 104 (including tax and S&H). It works great for the type of stuff I do. Leftovers, pulled pork, briskets, burnt ends, bread, etc. I don't use it for any deer or other game, so tthe level of performance is good for me especially at the price. I think they still have them for more or less the same price.

I have the V2220 and got it at wally world for under $100.

If you vac a lot at one time, you have to wait on the element to cool.

Just gives me time to drink a beer.

I use it on Game with no problems.

It has the dry/wet setting and "seal now" feature.

I have a Foodsaver Vac300. It works pretty good, the only complaint is when doing really large loads, I have to let it cool off too becuase it'll melt through the packages.

Got one.  Thanks for the input fellas. It was nice to see that many positive reviews so I feel confident again.  Apparently the people that shop at Amazon are really hard to please and can't use their sealers.

For a vac sealer I use the Cabela's brand.  If I had the cash I would go with a commercial grade chamber style, but you are talking $1000 minimum for one of those babies.

I vac seal lots of fish and the Foodsavers simply will not last more than a couple seasons.  They over heat and if any moisture gets out of the bag and into the workings of the unit, you may as well kiss the thing good bye.

The Cabela's Model (CG-15) has a wider sealing chamber than the Foodsaver and you can buy spare parts much easier than you can with a foodsaver.  It costs more, but I have only had to buy one compared to several Foodsavers.
