I saw a post some time back, I think from Quarlow, on a cilantro potatoe salad by CRG.  Well that sounds good to me sooooo. I found the recipe(on search) and made that beauty. Wow, my wife and I say this is the best potatoe salad we have ever had.  Sooooo my wife says REPEAT, only this time double it.

A plate with Tri-tip, sliced tomatoes and cucumbers from my garden,and the potatoe salad, and of course some homemade wine.(not in pic)

Glad you enjoyed the Cilantro Potato Salad.

It is goooood!

When you have a little left overs, try warming in the nuker just what you want to eat.

Not hot, just warm.

Takes on a whole new flavor.

Made 9 1/2 lbs for the 4th Pig Out and had none left and gave the recipe to 4 people.

I make it for the Deer Camp about 4 to 5 times during the season and everyone enjoys it.

The plating of the tri-tip, potato salad, cukes and tomatos, well like ronbreau would say .....

I'D HAMMER THAT ! Looks great.

Thanks for the advice on warm up for any leftovers (if any ), you know I will give it a try.

Looks good OH.  I was never much of a cilantro fan but I like it now.  It's sort of an acquired taste like curry or scotch  ;D

I talked Mrs. Redneck into trying this yesterday.  However, she is an avowed mayo-hater (if you've read my previous posts, she's yankee, so you understand). 

So, we tried substituting sour cream for *most* of the mayo.  Combined with the lime juice, it was a bit tart, and I think there was some interaction between the 2, as it had some bitterness.  We also didn't try the crab boil in the potato water, and felt like it needed a bit of salt.

So, if you do any tinkering, know that you may need to back off the lime juice and we'll definitely use the crab boil on the potatoes.  Curious if that's the liquid, Old Bay style, or spice-in-the-bag?

Overall, it's great, and I think if we'd stuck with CRG's prescription, I'm confident it would've been perfect.

I have been using Kraft olive oil mayo and it works good in the CPS.

I need to try to develope a mustard version of this, but I have been lazy.

When I do the Zatarain's style, I use the boiling bags and bring it to a boil

before I put the taters in.

Cilantro Potato Salad

final version....maybe

The following recipe is based on a per pound of potatoes.
Better make more than pound, you will be sorry if you don't.

   Ingredients
1lb of new red potato
1/4 lb of crisp fried crumbled or chopped bacon
3 heaping tablespoons of Kraft mayo
1 rounded teaspoon of minced garlic
1/2 ts of black pepper
1/4 cup of finely diced sweet yellow onion
1/2 of a fresh lime (just the juice)
1/4 cup of finely chopped cilantro

I cubed my potatoes as to not get too big of cubes so they all kinda cook
the same. Put enough water in pot to cover the amount of potatoes you are
cooking (add salt to the water) and turn on high. After the water starts to
boil, dump in taters bring back to boil and then turn it down to low.
When your largest chunk of tater just starts to get soft shut it down and
dump into a collander. Don't rinse all that good stuff off the potatoes.

In a large bowl add: mayo, garlic, pepper, cilantro and lime juice.
Stir together and let sit for 5 mins or so. Dump half of bacon in mix and
then potatoes and then other half of bacon and fold everbody together.
When you are ready to eat this top with green onion tops. Yum Yum

This is the recipe I make mine with.

I do not think you really need salt if you use the bags.  Two bags = good amount of spice.  One bag = great taste and little spice.  In my little opinion.

One bag probably has enough spice for most people.

Sometime I tend to cook for myself, cause nobody else does,

That looks fantastic, but I can't eat enough by myself...
(Mrs doesn't like raw onions OR cilantro -- I love both)

Definitely gonna try this one of these days when I have a party
I'm sure Squirt will help me eat it!

I love the stuff, basic recipe.  I gave the recipe to #1 daughter and she cooked some up this afternoon.  She said it ROCKS.  However if you're like Mrs. Hal, just get a pound of tater salad from the deli.   :(  One size fits all.
