Scheduled to arrive tomorrow. Wagyu brisket, 4 St. Louis racks of ribs and 2 petite butts of Kurobuta pork. Can't wait to see what this stuff looks like. Coming all the way from Snake River Farms in Boise ID.

I ordered late on a Wednesday night, and it was on the porch Friday morning.
Told 'em I wanted it to arrive on the 30th. Haven't received anything acknowledging shipping as of yet. ???

Saturday you will get the notice that you will get your stuff on friday.
That's the way it usually works for me.

Just checked -- The only email I got was the order confirmation - no follow-up - but there's instructions to login and view the order.
It will be there as ordered.

It's here! Arrived at 9:15 this morning, nicely packaged in an outer box and an inner box that was wrapped in an insulated type bubble wrap blanket. Inside the inner box was about 10 of those frozen gel packs stuffed in with the meat. The meat was still nicely frozen.

Just made the decision to pull 2 racks out of the freezer and let them thaw in the frig to Mak over the weekend. This will get interesting.

And I'm going to be happy happy just watching it do it's magic. Will start a new thread when I smoke the ribs this weekend.
The fat cap on the brisket is thicker than I have ever seen and much more white than I have ever seen. At the risk of "butchering", as in damaging the brisket, I'm going to try to separate the flat from the point when I smoke it sometime in the future.
