Welcome - Others will come with more tips but here is a corn tip - I smoke them in the husk. About 1 of smoke but the corn probably took 2 hrs all told.

Not sure you'd want to try a potato in the smoker, it might take a couple of days to cook.  ;D

I use a generous olive oil rub down prior to applying garlic salt and black pepper rub.  I cook and smoke at 220* to a IT of 125*.  IMHO pork tenderloin has a tendency to cook too dry at a higher IT.  I usually FTC for about 2hrs.  Others  I am sure will be along for additional ideas.  Good luck and welcome to the forum.

For potatoes I use the same method as Oldhickory. Try using new or fingerling potatoes, they are more expensive but smaller, uniform in shape and should cook faster.
