I stopped by the shop because I had nothing out for dinner - poor planing.
He grabbed three beef tenderloin steaks out of the counter. I said "Fine".
I asked if he made sausage out of the smoked Jals he did during the week. Yep, here, take a link. I have to get that recipe. It was warm, not too hot but with a different taste than hot Italian sausage.
The bottom line was $5 for the steak (about 1.4 pounds) and free sausage.
Anyway, the steak, zucchini and taters went on the grill for dinner.

Steve the butcher has been in the business for about 35 years. Nice guy and he is big on smoking. We get along.
He was smoking naked Jals for his sausage. I gave him a basic ABT recipe. He gave me a couple of smoked Jals - HOT.
I go in and he says try this. What is it? Smoked salmon. Here, try this. What is it? Smoked trout. So, what's this other stuff? Smoked mackerel.
I feel like a broken record saying this, but, if you can develop a relationship with a local butcher, it is worthwhile.

Relationship with a local butcher? Well, if we had something resembling a butcher locally I'd have a relationship with 'em. Nearest thing resembling a butcher around here is about 50 miles away.
