Roasted garlic or just regular garlic goes well in Ranch Dill dip.

What are you looking to use the dip for?  If you provide a little more info, we can get a little more specific for what you need.

HAd some one time at a burger joint in L:ees Summit.  They gave you a small cup of it to dip your french fries in.  Fantastic.

Roasted garlic is great no matter how you use it.

Here are a couple of ideas if your dip was mostly white.

Roast two foil wrapped bulbs for maybe 45 minutes at 350 with a sprinkle of OO on top.

Squeeze the cloves out into two piles.  Add some S&P to each and mash 'em.

Mix pile one with some mayo and some ancho powder and/or ground cumin.

Mix pile two with some sour cream and dried minced onion.  Maybe a little cilantro too.

Let them sit a while before use.
