Title: How to make a Sandwich Cubano / Medianoche, with pictures
Post by: classicrockgriller on August 05, 2010, 06:01:26 PM
I am NOT an authority on Cuban Sandwiches.

I got all my instructions from here.

http://www.tasteofcuba.com/cubansandwich.html

I made these first

After making the Bread, I took a loaf and sliced it long ways.

Both sides got mustard and the bottom got slice pickle

Then a layer of Ham

1/2 lb of pulled pork

Recipe called for swiss cheese, I had none so I used Pepper Jack Cheese

Another layer of pickles

And the top

Sliced it in half and applied butter

Since my press hasn't made it in yet I used two cast iron skillets

Slice diagonial long ways

And serve and eat

We have made um with two iron skillets ourselves. Heat the one for the top press in the oven first and it helps. Did you find any Mojo sauce? It's an added flavor that is good.

It's usually made with roasted pork loin (roasted with Mojo)...
I've been wanting to do it with pulled pork (call it whatever you want)...
But, Sonny beat me to it!!!!

What I read on the subject including other scources is that they call it Roasted Pork.

One place used pulled pork and one place used sliced pork all from the Butt.

The pulled pork I used was some left from some butts I did with mojo marinade and injection.

The sammie was dang good but wish I had some swiss as the pepper jack kinda took away from all

the other things working.

I am freezing 3 of the loafs and will get some GOOD sweet ham and swiss cheese and claussen pickles and give

it another go.

That's what I was thinkin'...
The butt has more natural fat/flavor than the loin...
That just seems like DA BOMB!

Wow!!

I think I have a small pork butt in the freezer, I need to go look..... it will get a mojo marinade & injection......

Not a fan of swiss -  but I have a local cheese that is really good and melts really well.... it might be perfect.........

Hey guys

what do you suggest for pickles?   Dill, non dill , obvioulsy not sweet.......

Didn't have a pork butt in the freezer but did find a couple tenderloins,   they are resting happily in fridge in a mojo sauce right now........      Also found some ham I cured in the winter in the fridge, it's defrosting.....     Bread will happen tomorrow.......     guess what's for dinner tomorrow

Thanks,
Deb

Right - not sweet - use dill slices (sandwich "stackers" work great)

When I was making mine all I could think of was claussens. Yumm

Nice crisp.

I sliced mine so that I left the "skin" of the pickle off.

Looking forward to your Cubano ala deb.
