Any thoughts about temp and timing for twin 6lb pork butts in the 6 rack model?  Thanks in advance,

Rub them and wrap in plastic for 24 hours or overnight.

I do four hours of smoke @200-225F - you will be looking at 12-20 hours, probably closer to 14-16, but we've seen them go 24.

Use FTC to keep them warm until serving time. I recently put a butt in FTC @930AM and it was still 155F @3pm.

Hiya ktd and Welcome to the Forum.

Don't use the bottom rack, but the second and third are just fine.

Keep your vent 3/4 to full open.

Might want to replace your water bowl with a disposable can pan.

It can hold more water for these long smokes.

The butts will hit a stall in the it rise about 160 to 170*.

This is normal and the stall may last several hours.

I use a temp of 225* and bring my buts up yo 190 to 195* IT

and then FTC like FLBR said.

Thanks for the tips.  What does FTC stand for?  Boy it will be nice to lose the newbie status!

FTC - Foil Towel Cooler
A resting / staging method of wrapping the product in Foil, then and old Towel, and place in a warmed Cooler (no ice). This keeps the product hot and allows flexibility in serving times. Most plan to get the food done early, then use FTC to hold the product until serving time. This method also acts as a passive oven, allowing the meat to cool slowly and evenly, while continuing the break down of connective tissue/collagen.
