Well some of you have known, others may not have, that when I got my MAK I ended up selling my Bradley as well as my 80l Cabelas Dehydrator.  It was a package deal to a friend where he took those two as well as my new Traeger in exchange for a good chunk of money towards the MAK.  While things have been going great with the MAK I couldn't get rid of that nagging feeling in the pit of my stomach now that the OBS was gone.  I knew when it came time to do salmon, and jerky, and sausage that the Bradley just couldn't be beat due to it's low temp control, especially with a PID attached.  So when I saw what was supposed to be a gently/barely used OBS on Cragislist I jumped on it.  As you can see by the picture below it was barely used, but it wasn't treated so gently, more precisely it was neglected and some items had some corrosion issues including the water bowl that had a pin hole leak from a rust spot.  Not a huge deal considering I wasn't going to use the bowl, the faceplate is cracked but that can be replaced although more than likely I will bypass the front controls completely now that I had a PID as well.  Great service from Auber as well, ordered on Thursday or Friday and it was here on Monday.

So Thursday night I spent cutting up 10#s of Eye of Round roasts to make Jerky chunks as well as mixing up 5#s of hamburger to make summer sausage.  I ended up using kits from Butcher BBQ because I needed some of their incredible Brisket Injection anyways.  The chunks got their Teriyaki jerky mix and the Summer Sausage used their SS Kit and their 1# Fibrous casings.  The store didn't have bulk hamburger in 80/20 so I had to buy some 93/7 and then ground up a bit of fat trimmed off the Eye of Round roasts and added that.  Hopefully it's a nice mix and it gave me a chance to use my new grinder as well, although getting it dirty only to grind up about a half pound of fat wasn't the smartest thing I've done.  First time using my new stuffer as well, I was solo that night so no action pictures unfortunately.

But here are the chubs just going into the OBS.  They are getting 120* for 2 hours, 1 hour to dry then I'll start the 2 hours of smoke, up to 140* for a couple more hours and then finishing off at 165* until the IT hits 152*.
