I can now say I have joined the ranks of the Bradley owners.  I have waited a long time to be able to get this smoker and I am a happy camper.  I also just ordered the Auber Dual PID so I can smoke my sausage.  I guess I better get this jewel seasoned and will smoke up a butt tomorrow.  I am so excited to try out all of the great recipe's that you all have posted.

mine does not  look that  clean, we  need to do a load of  ribs . brisket, and tri tip in that  beauty and break it in

At 1st light I got the OBS seasoned.  Don't you just love the smell of smoke?

While the OBS was in the seasoning mode I did a rub on the brisket.  I just did a simple salt and pepper rub using 2/3 pepper and 1/3 sea salt mix.  The meat was brought up to room temp just prior to the rub and going in the Bradley.  I will apply 5 hrs of Hickory.  I wanted some Oak but Bass Pro did not have any.

All loaded up and the Virgin smoke starts.  The smoke started at 8am and the brisket weight just shy of 6lbs.  Now the hard work of (cough) smoking begins.  I did take the Bradley pledge  ;D

It looks like they have made the V-Tray holes bigger since I got mine.

Just checked the cabinet temp after 2 1/2 hrs and it was 250 using an oven thermometer.  Thermometer on the Bradley reads 210.  But we all know that thermometer cannot be relied on.  I backed the temp down and will try to get it in the 210 area.  Wish I had ordered the PID long ago so I would already have it.

Sorry for the late posting as it has been a pretty busy weekend.  The brisket turned out fantastic.  My wife is not really big on smoked food however she thought it was very good and today wanted a brisket sammy.....Whoot.....can I get a "that's what I'm talking about"  LOL

This is right off the smoker with an IT of 180 and getting ready for the FTC.  I let it rest for 3 hrs in FTC and it was tender and moist.

it is a cheap $3.50 oven thermometer that I picked up from Publix grocery the day of the smoke.  I just wanted to make sure that the the cabinet temp was staying close to the 210 area.  Until my PID arrives this will have to work.  And I don't need my glasses to see it....LOL

Looks like you had a good first encounter Sailor.  Make sure you keep those pics of the unit when new.  You'll never see it like that again  ;D
