Title: Electric pressure cooker ordered.

I ordered a Fagor stainless steel 3-in-1 6-quart multi-cooker from Amazon ($119.95 free shipping) yesterday evening.
I am looking for any good recipes (especially black beans and rice) you can part with.....I am even willing to take a death oath to never pass on a recipe if needed!!!   :-X

I'll see if I can find a black bean & rice recipe tonight.  Beans do great in the pressure cooker.

But I do love my pressure cooker.    I'll dig up a couple posts where I used mine.

Don't have a pressure cooker (they still scare me) but make black beans and rice now and then.  I think this came from recipezaar.com and gives a good idea of how much of what to put in.  I usually precook dried beans instead of canned, but this is a good starter.  I'm guessing it should be easy to convert to pressure cooker instructions:

SERVES 4

   * 2 tablespoons olive oil
   * 3/4 cup chopped onion
   * 1/3 cup chopped green pepper
   * 3 cloves of minced garlic
   * 1 (15 ounce) can black beans (undrained)
   * 3/4 cup water
   * 1 teaspoon oregano
   * 1/4 teaspoon sugar
   * 1 package sazon goya (without annato *see note)
   * 1 tablespoon cooking wine or cider vinegar
   * 2 cups cooked white rice

  1. Heat oil in a medium sauce pan, sauté onion, green pepper, and garlic.
  2. Sauté until tender@8-10 minutes.
  3. Add in remaining ingredients and stir until boiling, reduce heat and simmer until sauce is reduced@ 20 minutes.
  4. Serve over white rice.
  5. I like to mash a few of the beans with the back of a spoon to flavor the sauce.
  6. Note: if you do not have Sazòn Goya an appropriate substitute would be 2 tsp ground cumin, 1 tsp chicken bouillon, and 1/2 tsp garlic powder, 1/2 tsp salt

Ray, you did me in.  I ordered the unit from overstock.com.  I'm a member and so got a few bucks off, cash back and free shipping.

My ancient PC was a PITA on the stove top.  I used it for canning.  I hope this one is easier to use - plus non-stick.

Fagor 3-1 Cooker came an hour ago. There is a recipe for black bean and confetti rice in the booklet that has some drool on it now!!!  ::)

Can you believe there is NO bean soup or chili recipe in the booklet???

The two cookbooks I ordered from Borders are due this Thursday.

That's a bummer.  I found this chili recipe from Alton Brown online.  Looks decent and there's NO beans in it:  http://www.foodnetwork.com/recipes/alton-brown/pressure-cooker-chili-recipe/index.html

Here is the recipe.  I don't know if it will work in an electric rice cooker.
 
Black Bean Confetti Rice

1 cup long grain white rice
1/2 cup chopped red bell pepper
1 scallion, chopped
1/2 cup cooked black beans
1/2 cup frozen corn
2 cloves garlic, pressed
1 1/2 cups vegetable stock
1/4 cup packed cilantro leaves, chopped fine
1/2 cup bottled medium salsa
 
Place rice, peppers, scallions, corn, beans and garlic in the cooker with vegetable stock and set to rice cook.
 
Once rice cook cycle is complete, release pressure and open the lid.
 
Add chopped cilantro and salsa, fluff gently with a fork to mix.
 
Serve hot.

I'm in the chili has no beans camp!  I have never figured out what they call "chili" in Cincinnati.

Pressure cookers scare the hell out of ever since my mother had hers blow up, and I do mean blow!  It's a very good thing nobody was in the kitchen when it went.

While I agree.....I do love love my "Cincinnati" style chili done 5-way!!!  Chili over pasta sure is good on a cold day!!!
