I have been wanting to smoke a meatloaf from this recipe:
SMOKE AND SPICE'S "AIN'T YOUR MOMMA'S MEATLOAF"
1/2 cup minced onion
1/2 green or red bell pepper finely chopped
3 garlic cloves, minced
1 t freshly ground black pepper
1 t coarse salt, either kosher or sea salt
1/2 t ground cumin
1 1/4 pounds of ground beef
1/4 pound of ground pork
1 1/2 cups dry bread crumbs
3 T sour cream
2 T Worcestershire sauce
1 large egg
1/4 cup stock, preferably beef
1 t Tabasco or other hot pepper sauce to taste

I had also ate a brisket meatloaf sammie a while back and decided to combine the two.
I took a 12 1/2 lb brisket and leaned it out. I got 8 1/2lbs of meat. I added 1 1/2lbs
of fat back to it to give me roughtly a 80/20 ratio. Gave it a course grind, mixed it up,
and then a medium grind. Then I followed the rest of the recipe.
One of the things mentioned in the link is that sometimes the meatloaf doesn't stay
together so I put mine in loaf pans and into the freezer for a short ride.

Also did a 4lb chuck roast for chop beef with Wild Willy's Rub and a mustard brushing.

Used 3 hrs of Pecan and set the temp at 240*

I hammered on that meatloaf again today for lunch! I think it taste better today and last nite

Snelly, I ground up a Brisket and then follow the recipe. I mixed 1 1/4 lb of ground brisket with
1/4 lb of fresh ground pork.
I sauteed the onions, bell peppers, minced garlic in strained bacon grease. After it has cooled down
I mixed the rest of the wet liquids in the sautee pan along with rest of the spices. I used crutons, but
smashed them and added them to the pan. Pour that on top of the brisket/pork and hand mixed it all.

Last week on my Road Trip, I brought my Mom (3) coolers of grilled/smoked goodies.
She called me last nite and wanted the recipe for the Brisket Meatloaf. When I told
her how it was made of course she said she couldn't do that. I told her next time I
made one I would make her another. She ask if she could have two. ;D

As I type, I am smoking a meatloaf. 1/3 pork, 1/3 deer, 1/3 ground brisket. I modified the recipe to include fresh basil from the garden, fresh Italian parsley, buttermilk, roasted poblano chile, ancho chile, Hatch New Mexico Chiles, A-1, chile sauce, fresh ground parmigiana cheese, chopped tortillas, homemade Serrano pepper sauce -------
Oh hell, I'm not following the recipe at all, but I am smoking a meatloaf with fresh ground brisket.
Alcohol may have been a contributing factor to this recipe.
Alcohol induced smokes may thinkstumble into a similar smoke.

I am in full recovery mode and am attempting to reconstruct the nights events. I do remember snapping some photos. Just not sure what they were. I will work on a post and recipe as things become a little more clear.
The meatloaf was great. I kept cooking up mini slider patties to adjust the seasonings. Some fine eating.
