Title: Getting Ready for 1st Bacon Attempt
Post by: Indy Smoker on August 27, 2010, 07:26:23 PM
I'm getting ready to go for my first attempt at making bacon.
I was thinking of using the recipe from Tenpoint5 (Maple Cured)
Does anyone have any comments on this method and should I use a Hickory or Maple smoke - or alternate the biscuits ??

I use Maple smoke with his recipe....IMO best bacon ever if you like that type of bacon, be careful when frying it burns easy.

I also make a hickory bacon that I really love.  Just depends on what your in the mood for.

Thanks for the suggestion.
Is there something different than store-bought that makes it burn easier???  Or was it sliced thin ??

It is the sugar content. This is a very sweet bacon. I have used both Hickory and Maple when making it, and like Smoke it all said the Maple is really good with this recipe.

Curing bacon is very addictive.  You will never be able to stop at just trying it once. Pretty soon word will get out that you make some darn good bacon and your friends and family will eat it faster than you can make it.

You have been warned.

I'll second Bilder, eating Bradley made bacon is addictive - I now have friends inviting themselves over for breakfast!!

I've used the recipe and smoked it with both Maple and Hickory, everyone seems to prefer the maple but still LOVE the hickory.  i.e. you can't go wrong making your own bacon and is pretty darn easy to boot.

I use his recipe exclusively wont eat any other bacon, have done it oh 5-6 times x 4 slabs every time, and it it totally up to you on the smoke, you like a little stronger smoke flavor go with the hickory or if you want a little more mellow smoke go with the maple. The last batch I did I did both hickory and maple and I think the hickory overpowered the maple.

THANKS 10.5
