Title: Misquite for ribs?
Post by: Phone Guy on June 21, 2005, 05:26:34 PM
Should I use misquite for baby backs?

There is nothing wrong with the mesquite flavor, the issues are simply that the Bradley tends to produce a very concentrated smoke, and for the mesquite in particular, this seems to overwhelm a lot of people.  If you go with mesquite, simply reduce the amount of pucks you would normally use, or mix a few mesquite in with a weaker flavor to balance it out.  Err on the side of too little smoke to start, and you can at least enjoy your meal and add more next time.  If you add too much mesquite, you may find those ribs headed for the trash can.

Thanks,
after getting some feed back, I'm going with about a two hour smoke.

bsolomon is spot-on here, PG.  The mix idea is what I use most often (1-2 hr mesquite, 2-3hr something mild or neutral).  If you use mesquite (or any wood for that matter) and it comes out too smokey, try leaving it in the fridge for a day or two and then taste it again.  Sometimes that takes the edge of something that has been smoked too long.
