I need to get rid of some deer meat.    Season is coming quick and I'll need the room in the freezer.
Decided I need some beer sticks.    Was in the butcher shop I frequent and saw they had the spices and cure for Salami.   I grabbed a pack.
Today I was busy grind, mixing, and stuffing the beer sticks.    Tomorrow is smoke day.   I'll also be grinding, mixing and stuffing the salamis which I'll smoke next week.
I've never made salami before so this is a new adventure.    I plan to use hickory and when I'm done,, it'll hang in a very dry room in my basement for a while.
I should say that I spent this after noon cleaning a cussing.    Clean up after makeing sausage is no fun.

Just keep thinking about the finished product while you clean. OK I know it doesn't make it any easier, but it might help take your mind off it. Sounds like you are going to have some awesome beersticks.

Usually when I make sausage from deer, I use the trim meat.    This time, since I'm cleaning out the freezer, I'm using what I have.    Happens to be sirloin tip.

I usually end up begging the wife to do the cleanup cause I am to tired after doing all that sausage making especially if there is drinking involved.

Wifie no helps me except eat the goodies.

And usually I get STUCK cleaning up her mess.

Yesterday I was at it again, this time getting ready to make some Salami.   When I was all done, I started the smoker and started to make the beer sticks I stuffed the day before.   When Everything was running smoothly I headed into the house to clean up.   Low and behold :o, my wife had everything cleaned up.

The smoke took longer than expected and I can't explain why.    When it was done it got an ice bath and hung to bloom.    This morning I cut it and vacuum sealed.   Took time out to snap picture.

Tomorrow the salami is going into the smoker early.   Have a feeling it'll be a long day.

It's a Henkel boning knife.   Bought it replace another boning knife whose blade is only half of what it used to be.    It wasn't a Henkel and has been improperly sharpened too many times.   This knife doesn't get used by my wife in the kitchen, so it still has a good edge.
