well everyone I  score again

14 lb brisket

coating  of paprika

then granulated garlic

then a dusting  of sea salt

and ground mustard

this treat  is going  in the smoker Friday after noon between 4 and  5 and the smoker will be on auto pilot for the very  first time with a new controller and will see how  well it  works.

and  this brisket will give me a chance to try  out my new knives

15 lbs  of beef  ribs seasoned the same  way  as the brisket and  going in at the  same time, ribs on top and brisket on the bottom, box temp at 215 and am  shooting for an it  of 190 to 195 on the brisket.

the gentleman that delivered these items to me, asked 1  thing,,,  could i smoke these for   him and his  family, i said  sure..  and  with that he  offered me half and explained to me  it is  only  him, his  wife and two  kids, i said that  is  fine,  there  is  only 3 in my  family so there is plenty to go around
