Title: Neighborly Ring Bologna

My neighbor asked me if i could make him some ring bologna with cheese  ;D  Sure Bro

Here is my 1 cup cold distilled water with 1 tsp of cure #1. Going in the fridge for a couple hours to get colder. My 4 protein lined synthetic casings. Going to soak them in water while i get the meat mixed in awhile.

Got the MJ Cheese cubed. Only 1 1/4 cup, being its not high temp. Too much will make the bologna mushy  :-\  Added to 5lbs of GM when mixing.

5 T of mix into the 1 cup cure water. Mix up good and put back in fridge for another hour to marry up.

My PID at hang time is at 130* for 1.5 hours/no smoke

PID Settings

130*.....1.5 hrs....no smoke
140*.....3 hrs....w smoke for the first 1 hr 40 mins
150*....3 hrs....no smoke
160*....3 hrs....no smoke.........................................may hit stall around here
165*....4 hrs....w 1 hr of smoke
170*....4 hrs or until i reach my IT of 152-154*

All times are variable depending on IT time.

Note: Temps as not to melt the cheese or fat-out the rings

Rick,  6 out of 30 houses in our little neighborhood are for sale, oldest is six years old.  All have covered and screend patio areas with outdoor kitchen setups, some have 3 car garages, pools, whatever you want we have it.  And we have southern warmth too.

I have one too.  Amazing how we all save it for "nice".  The reason I say saving it for nice is I had a grandmother that when you would buy her something pretty to wear, she never wore it.  When asked why she didn't wear it "I'm saving it for nice" meaning a special occasion. ;)

Rick, what is the difference between the trail bologna and SS?  Have done the LEM SS and have a Trail waiting to use.

Ring bologna is smaller diameter than SS. Easy to put in pocket for hunting, thus called trail bologna.
