Here is my 1 cup cold distilled water with 1 tsp of cure #1. Going in the fridge for a couple hours to get colder. My 4 protein lined synthetic casings. Going to soak them in water while i get the meat mixed in awhile.

Got the MJ Cheese cubed. Only 1 1/4 cup, being its not high temp. Too much will make the bologna mushy :-\ Added to 5lbs of GM when mixing.

150*....3 hrs....no smoke
160*....3 hrs....no smoke.........................................may hit stall around here
165*....4 hrs....w 1 hr of smoke
170*....4 hrs or until i reach my IT of 152-154*
All times are variable depending on IT time.
Note: Temps as not to melt the cheese or fat-out the rings

Rick, what is the difference between the trail bologna and SS? Have done the LEM SS and have a Trail waiting to use.
Ring bologna is smaller diameter than SS. Easy to put in pocket for hunting, thus called trail bologna.
