Title: Newbie cooking 4# Pork Butt
Post by: DocYoung on September 04, 2010, 10:50:31 PM
Hi everyone I recently joined and tomorrow I am going to do my first pulled pork as a test for a bigger pot luck at work later in the week.  I wasn't able to find a 7-10 lb butt, just a 4 pounder ( not a Sam's Club member yet).  I applied the rub tonight and it is sitting in the fridge and I know to take it out to bring it to room temp and pre-heat the smoker.

What I am wondering is on the smaller butt ( 4.5 lbs) what do you think the cooking temp should be and the ratio of cooking time to smoking time and FTC should be.  Need some help from the pros.

4.5 lbs butt
        Cooking temp?
        Smoke time?
        FTC time?

Thanks,

Mike

We get small butts over here and that's about the biggest I've cooked.  I smoke at 210 for three hours and then kick the temp to 225 until the desired IT is reached.  I FTC for 1.5-2 hours generally.

Thanks,

It's in the smoker so I will just have to be patient!

Thanks again
