Hi Everyone,
Just found this forum my name is Denny, and at the moment I am turning my outhouse at the bottom of my yard into a Smokehouse so hopefully in a couple of weeks I should be up & running.

Outhouse?   That should make things flavourfull.    Hopefullly it won't be a dual purpore building ;).    Actually, my grandfather, many years ago, converted an old out house into a smoker.   Rack were hung near the top and they used an old tub on the floor for a fire and smoke generator.   It worked well and turned out a lot of good sausage.   It lasted for quite a few years until the fire got too hot one day and burned it to the ground.

I have an outhouse smoker but it was built new and NEVER used as an outhouse. I put an upper and lower door on so I would not lose heat when putting wood chips on the pan for smoking. I use a propane burner for heat, it works very well.
