Title: First Pulled Pork
Post by: oguard on June 24, 2005, 07:52:10 PM
Just took the pork butts out of the Bradley IT of 187F.I found some boneless butts at the local grocery store they were about 3lbs each.I am going to FTC for about 2-3hrs and then shred it up for some sandwhiches tonight and vacuum pack the rest for future meals.Just one question should I put some sauce in the bags before I seal it?
BTW the pork was almost falling apart when I took it off the rack I almost started eating it[:p][:p].

Anything to add/keep moisture helps.  Many recommend adding a little apple juice during the FTC, and many have had good results adding the sauce prior to freezing.

3 lbs is pretty small as butts go. How long did it take to get to temp?
