Title: Inverting the racks for more space....

Hey folks;

I've searched the forum and have some answers but want to ask again.....

Anything special to be aware of if I invert my racks while doing salmon or trout? Does the smoke circulate enough?

I've done that for ribs, jerky and salmon.

No problems.

Just be careful when rotating racks.

It works well as long as the fillets are not too thick. As mentioned it makes it a little difficult to rotate the racks, and it takes additional time to check the bottom racks for "doneness". When checking the bottom trays for doneness, I remove both racks from the smoker and place them on a table that has enough space for two racks. That way I can remove the top rack and set it on the table while I check the bottom rack.

Works well, I do like habs stated. Remove both racks so you can check them well, then rotate and put back in.

Sounds really good.

I do mostly trout and salmon tails (instead of centre cuts) so thickness isn't an issue.

I do it for every batch. Of course, my pieces are always sized right to fit.....Only problem I've ever had is pieces slipping off if I'm not careful when moving racks around.
