All I can say is WOW ! These rock !!
Here's what I used.
Jalapenos
Bob Evans breakfast sausage browned in a pan
Shredded sharp cheddar cheese
Oscar Mayer thin sliced bacon
Garlic salt
I washed and cored the peppers then layered the sausage and cheese (sausage,cheese,sausage,cheese) then wrapped them in bacon. Then sprinkle lightly with the garlic salt. I woulda used chopped garlic instead of the garlic salt but didnt have any this time.
I smoked them for 1 hour using pecan at 230 deg then let them run for another hour. The hardest part was not peaking inside while they were cooking!! Man I wanted to though!

I have a crop of cherry, poblano and hot banana peppers getting ready. Not exactly ABTs but not bad either.
They look great. Now try different fillings. I've made three cheese, cheese/sausage, cheese/bacon/ cheese/brisket and cheese/pulled pork. They all are good.

As Pens posted - it is fun to try different combinations. But also don't forget to try ABT's on the Half-shell.
Half them lengthwise.
Mix up a mixture of
Cream Cheese
Cooked Chorizo
Chopped green onions
Garlic
Cumino
S & P
Take a spoon and fill the halves and wrap those babies up in bacon, then smoke.
And again - play with the mixture stuffing.
