Title: Using the dual PID with the ham
Post by: GusRobin on September 09, 2010, 05:20:40 AM
So I am cooking this pork leg into a ham. The recipe calls for 12 hr at low heat, than 8 hrs with smoke at a higher temp, then cook until done.
Question:
My original plan was to set step 1 on the dual pid for 12 hrs and step 2 for 8 hours and step 3 at the IT of the meat. I was going to set the PID to turn on the smoke generator at the beginning of step 2. When it automatically turns on the SG, does it advance the pucks also or just turn on the SG and I have to start the puck advance manually? I have an OBS if that makes a difference.

Anyone know?

The OBS SG will start the 20 minute advance cycle on power on.

It doesn't move until 20 minutes.

You could already have two pucks advanced prior to the PID turning on the SG.

I would probably not do the advance to give the burner time to pre-heat.

Just account for the 40 minutes in your programming.

Yea I was thinking the first puck would get wasted!

thanks - I'll just account for it in the programing. Thanks again for the inputs.
