This weekend we have our first full competition. Our two previous have been one day ribs and chicken events. This one is a KCBS sponsored event. We will be cooking ribs, chicken, brisket and pork. We will also be entering the chef's choice. Can't wait, but man do we have a lot to do and take.
We will be there all day Friday and Saturday so if you are in the Shrewsbury, PA area stop by and see us!

Here is the crazy thing Caney, we scheduled competitions for back-to-back weekends. So we get to do it all over next weekend. We are a glutton for punishement. But I love it!

I am envious. Would like to participate in one of them myself. Just met a guy this week that helps on a team. They do really well and have a bunch of trophies to show for it. They believe that they may make it on one of the Pit Master types of shows before too long. They guy lives in a neighboring city and said he was going to bring me a sample of their brisket over tomorrow. I can't wait. Last weekend they competed in Mesquite Arizona. Harry Soo (Slap Yo Daddy) was next door to them, Johhny Trigg was next to him with Big Papa Smokers across from them if I remember correctly. Talk about being in greatness. I'll be keeping in touch with them for when they compete in some local competitions. I hoped they liked my Jerky Nuggets and Beef Sticks. ;D
Well, what a weekend. We had a blast at our first full KCBS competition. When we first pulled up to the competition site Friday we sure felt way out of our league. We made our way to our spot and got set-up. We didn't finish as well as hoped but we feel pretty good considering the competition we were going up against. This was a very veteran group of competitors with multiple state championships to their credit. We finished 21st overall out of 29. We were 1 of only 2 rookie teams at his competition.
Our highest finish was 13th in ribs which we were very pleased with. We finished 19th in Brisket, 21st in chicken and 25th in pork. We got very good scores in appearance but we were inconsistent in flavor and tenderness. With a few tweaks I think we can move into the top 10. Below are some pics from the weekend.

Thanks everyone! We are ready to jump back into it this weekend. This competition is in Raystown, PA if anyone is in the area. It is a PA State Championship event also sanctioned by KCBS. This week the competition is going to be even tougher. We will be facing some of the same great teams from last week and a few others you might recognize such as 3 Eyz BBQ and Diva Q. She was just on BBQ Pitmasters a couple weeks ago.

The weather was outstanding. Sunny and 70 during the day and lower 50's at night. Hoping for more of the same this weekend. I can see how rain could make things very tough.

Great job Bryan! Keep at it and you will be the talk of the "circuit". From what I have seen and learned, it is a game of persistence and perfection. Hang tough and you'll soon be a legend.
One of the things I learned this summer from a guy who is a very accomplished KCBS competitor, as he stated it, to win you can't stray very far from the pack. He suggested going to a few, get sample to taste from the top three at two three comps and you'd then know the winning taste. He added that the winning taste (i.e., "the pack") changes and evolves "at a glacial pace". He also added that as you get to know some of the top names they will share another common tidbit -- they they cook for themselves and their family is not they way they cook for competition (meaning they play not to their taste but to the pack standard).
Now go kick some butt ... and ribs, and brisket, and chicken, and .. what about that Chef's Choice Pizza?
I might try to get there on Sat. I know the judging is not till Sunday but it would still be cool to check things out. I think its a good 1-1/2 hour drive from here to get there. I'll see whats going on Sat. :)

If any of you get a chance, check out BBQ Pitmasters tonight. 3 Eyz BBQ, a team that we will be competing against will be on the show tonight. That makes two teams from BBQ Pitmasters in this competition this weekend. It would sure feel good to beat a few of their entries.
