I score the fat cap so the cym and rub penetrate into the meat.

Fiesta Brand products are produced in San Antonio, TX by the Bolner family since 1955. They are a great company with many fine products. I called customer service one time to try to locate a product and was put through to one of the family. After an interesting conversation, he said he wanted to mail me the product FrePas style for being a loyal customer. He then made sure it got into the local store.
Their various dried chiles and New Mexico Ground Chile are staples in my kitchen. Fortunately, there is a four foot section of their products in many local stores.
I have not used their brisket rub and look forward to your review.

Yeah they are good people. When i drove tractor trailer to Dallas, Houston, Waco, San Antonio and a few other Texas cities i would load up on Bolners and Adams Extract goodies. I was out until my daughter got some for me. Up here in coal country its hard to find good spanish spices.

I used Fiesta products for years (when I or someone I knew used to go to SA several times a year). Like Pachanga, I'm waiting for your report on their brisket rub - might order it on line if it's that good.
As I am. I have seen it once at Academy Sports, noticed it, but wife was outside in the heat (and she doesn't like being outside in the heat - if you know what I mean) so was in a hurry to grab my bags of lump and hightail it to the register. Went back a week or so later to look at it better, and it was gone. What are the listed ingredients?
The brisket turned out good. The bolners was a nice change and my wife likes it because its not over spicy or hot. I did add a spray to the brisket of water, worcsetershire sauce & beer. I will use the Bolners again.

Gebhardts was all my mom used until they took the cumin out of it. Now i see they have 2 kinds. A blue banner w/out cumin and a green banner w/cumin. She used to get it by the pound.

Was in one of the local independents last night for a quick stop. Strolled by the Fiesta spice aisle, about 10 feet of stuff.
